Healthy 20-minute favorite dinners 2023 (weekly plan and shopping list!)

Because I focus everything on the Christmas party, I tend to forget to plan dinners for the rest of the week. And even though I visit my parents on vacation, my mom put me in charge of meal planning when I’m home. This week I decided to look back at all the delicious new recipes we released in 2023. From a tasty enchilada skillet to a nice bowl of lemon chicken soup, this week’s menu features some of my most beloved recipes from the past year, all made in 20 minutes or less.

Christmas is my favorite holiday of all time! I’m excited to be in my hometown, spending quality time with my family and friends. My sister and I have been helping my mom prepare for the Christmas Eve dinner my parents are hosting. We always make roast turkey, buttery green beans with slivered almonds, and wild rice. After dinner, my mom sets the dessert table with all the sweet treats her friends have given her the day before Christmas. (In Mexico, it is common for friends to give each other small Christmas gifts, such as cookies, pies, brownies, or rompope, an eggnog-like drink made with almonds, milk, egg yolks, sugar, rum, and cinnamon.) As many people may have their holiday menus planned, I added some recipe collections to use as inspiration for last minute planning instead of a fixed Christmas Eve and Christmas Day menu.

While I think all of these recipes are delicious, Fridays Steak Enchilada Skillet has a special place in my heart. This recipe includes ingredients I grew up eating in Mexico, like enchilada sauce, cilantro, corn, and whole wheat tortillas. Not only is this recipe on the table in just 15 minutes, but it uses one pan to keep things simple and clean up quickly. Added bonus: It’s a complete meal so I don’t have to worry about sides.

Whenever I’m home in Chihuahua, Mexico, my schedule quickly fills up with a succession of social activities at Grandma’s for lunch with friends. Between that and the cold weather, I want to make sure my immune system is in the best possible shape. And what better way to do that than with a nutrient-packed smoothie? My family’s Christmas meal usually starts with a variety of cold meats and cheeses, olives, toasted crostini, salted nuts, and veggies with a creamy dip (even though we’re adults, my mom still finds ways to get us to eat more veggies). But to be honest, most of us tend to skip the veggies. As they say, you eat with your eyes first, and most plates look boring. So this year, instead of putting them on a platter, I’m making this pretty Christmas tree. I hope it encourages everyone to eat their vegetables, including me.
